I’m always looking for easy, painless ways to eat healthy on the go. Keeping a variety of chopped up and prepared vegetables on hand has been an extremely convenient way to put meals together in just a few minutes. When hunger strikes, which is real often – let me tell you, I simply mix and match prepped vegetables with other foods to create satisfying and delicious entrées. Wraps, omelettes, sandwiches, and salads are my favorite go-to meals when the clock is tickin’!

This chicken vegetable power salad is packed full of nutrients, fiber, and protein. Although salads are refreshing, they don’t always seem to cut it. This one, however, is loaded with substance to get you through the day.

Chicken Vegetable Power Salad
 
The best part about making a salad is that you can easily substitute and adjust measurements to your liking. This recipe below is a great starting point, but by no means does it need to be exact.
Ingredients
  • 3 c. fresh greens
  • ½ c. grilled chicken
  • ½ avocado
  • ⅓ c. corn
  • ⅓ c. grape tomatoes
  • ⅓. c. shredded carrots
  • ⅓ c. edamame
  • ⅓ c. sliced cucumber
  • ⅛ c. red onion, chopped
  • ⅛ c. walnuts
Instructions
  1. Add all toppings on a bed of mixed greens.
  2. Drizzle with a little dressing, and enjoy!

I often enjoy salads without dressing, but this Italian Salad Dressing is one that is light, natural and adds great flavor.

Italian Salad Dressing
  • ½ c. oil
  • ½ c. white vinegar
  • ½ c. apple cider vinegar
  • ⅓ c. water
  • ¼ c. sugar
  • 1 tsp. salt
  • ½ T. parsley flakes
  • 1/2 clove garlic, minced

Add all ingredients to a jar and shake well.
