The perfect mix of refreshing and savory, it’s no wonder why ceviche is my all-time favorite kind of dip. If you’ve never heard of this dish before, it’s a popular seafood recipe in the Americas – specifically Central and South America. There are hundreds of variations of ceviche, which makes it easy to customize it to your liking. I tend to prefer a not-so-spicy blend. Serve as an appetizer with chips, or use to make tacos. Your guests will adore this wildy addicting snack!
The Recipe:
- 1 lb jumbo cooked shrimp, peeled and deveined
- 1 tomato
- 1 avocado
- 1 jalapeño
- 2 limes – juice of
- 1/4 c. chopped red onion
- 1 tsp. olive oil
- 1 tbsp. chopped cilantro
- salt and pepper
1. Combine lime juice, olive oil, and red onion in a small bowl. Add a pinch of salt and pepper. Let them marinate for a minimum of 5 minutes.
2. Combine chopped shrimp, tomato, avocado, and jalapeño in a large bowl.
3. Mix in red onion marinade and cilantro. Gently stir all ingredients together.
Serve with your choice of chips. I prefer Tostito’s Scoops – they keep the food on the chip perfectly.
