A quick, simple, and nutritious meal in the morning is where it’s at. This egg + veggie breakfast wrap is my first go-to when I need something healthy and refreshing. What’s great is this recipe is can be completely customized according to what you have on hand.
- 1 tortilla
- 2-3 eggs
- 1 c. spinach, chopped
- 1/4 c. tomato, diced
- 1/2 avocado, sliced
- 1/4 mozzarella cheese
- 1 tbsp red onion, chopped
Here are a few other tasty ingredients I like to alternate:
- green pepper
- feta cheese
1. Scramble up your eggs.
2. In a separate bowl, mix eggs with all chopped ingredients.
3. Melt the mozzarella cheese on the tortilla over low heat.
4. Add the eggs and veggies to the tortilla to complete the wrap. Enjoy!
No tortilla? No problem! Enjoy as a dish – it’s just as tasty.
